Pork and Broth Preparation

Prepare the Pork
In a large pot, add the pork belly and cover it with 2000 ml of water. Bring to a boil over medium-high heat.

Create the Broth
Once boiling, reduce the heat and add soy sauce, salt, crushed garlic cloves, and sliced ginger to the pot. Simmer for about 30 minutes until the pork is tender.

Remove Pork
After simmering, remove the pork belly from the pot and let it cool. Strain the broth to remove any solids and set aside.
Vegetable and Noodle Preparation

Prep the Vegetables
While the broth is simmering, slice the bamboo shoots, shiitake mushrooms, and carrots into thin strips. Chop the green onions.

Cook Saimin Noodles
In a separate pot, bring water to a boil and cook the saimin noodles according to package instructions. Drain and set aside.

Combine Ingredients
In the strained broth, add the prepared bamboo shoots, mushrooms, bean sprouts, and carrots. Simmer for an additional 5-10 minutes until the vegetables are tender.
Assembly and Serving

Slice the Pork
Once the pork belly is cool, slice it into thin pieces.

Serve the Dish
In a bowl, place a serving of cooked saimin noodles, ladle the hot broth and vegetables over the noodles, and top with sliced pork and chopped green onions.
