For the Ahi Tartare

Prepare the Ahi Tuna
Dice the fresh ahi tuna into small cubes and place it in a mixing bowl.

Chop the Ingredients
Finely chop the macadamia nuts and green onions. Add them to the bowl with the ahi tuna.

Mix the Dressing
In a separate small bowl, combine the soy sauce, sesame oil, lime juice, salt, and black pepper.

Combine Everything
Pour the dressing over the ahi tuna mixture and gently toss to combine. Cover and refrigerate until ready to serve.
For the Wonton Chips

Prepare the Oil
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

Fry the Wonton Wrappers
Cut each wonton wrapper into triangles. Fry them in batches until they are golden brown and crispy, about 1-2 minutes. Remove and drain on paper towels.

In a small bowl, mix the mayonnaise, wasabi paste, lime juice, and salt until smooth.
