    Prepare the Ingredients

    Begin by trimming excess fat from the pork shoulder. Cut it into 2-inch cubes. Rinse the taro leaves thoroughly to remove any dirt. Chop the onion, garlic, and ginger finely. Peel and chop the carrots and potatoes into bite-sized pieces.

    Sear the Pork

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the cubed pork shoulder and sear until browned on all sides, about 5-7 minutes. Remove pork from the pot and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion, garlic, and ginger. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

    Combine Ingredients

    Return the seared pork to the pot. Add the carrots, potatoes, coconut milk, chicken broth, soy sauce, fish sauce, brown sugar, black pepper, and salt. Stir everything together until well combined.

    Gently fold in the taro leaves into the mixture, ensuring they are submerged in the broth.

    Simmer the Stew

    Bring the stew to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors meld together.

    Taste the stew and adjust seasoning with additional salt if necessary. If the stew is too thick, add more chicken broth to reach desired consistency.
