Prepare the Salad Base
In a large mixing bowl, combine the romaine lettuce, finely chopped kale, diced cucumber, and halved cherry tomatoes. Toss gently to mix the greens and vegetables evenly.

Make the Lemongrass Caesar Dressing
In a food processor, combine the finely chopped lemongrass, minced garlic, minced anchovy fillets, and egg yolk. Blend until smooth. Gradually add the lemon juice while the processor is running. Slowly drizzle in the olive oil until the dressing is emulsified and creamy. Finally, add the grated Parmesan cheese, salt, and black pepper to taste. Blend again to combine.

Combine the Salad and Dressing
Pour the prepared dressing over the salad base. Toss gently to ensure all the vegetables are coated with the dressing.
