Wash the romaine lettuce thoroughly under cold water. Dry it using a salad spinner or by patting it down with paper towels. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Add the croutons and grated Parmesan cheese to the salad bowl with the lettuce. Toss gently to combine.

In a medium mixing bowl, combine the finely chopped lemongrass, minced garlic, egg yolk, Dijon mustard, lemon juice, Worcestershire sauce, salt, and black pepper. Whisk the mixture until well combined.

Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and emulsified.
