Method

Preparing the Rice

    Place the short-grain rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, pour the vinegar mixture over the rice and fold gently to combine. Let it cool.

Assembling the Lays MAX Nori

    Lay a sheet of nori, shiny side down, on a bamboo sushi mat or a clean cutting board.

    Using wet fingers, spread a thin layer of seasoned rice over the nori, leaving about an inch at the top edge.

    Place the crushed wasabi peas, cucumber, avocado, and carrots horizontally across the center of the rice.
