Method

Lamb Chops

    Marinate the Lamb

    In a small bowl, mix olive oil, minced smoked garlic, chopped fresh rosemary, salt, and black pepper. Rub this mixture all over the lamb chops and let them marinate for at least 30 minutes.

    Grill the Lamb

    Preheat your grill to medium-high heat. Once hot, grill the lamb chops for about 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness. Let rest for a few minutes before serving.

Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into even pieces. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    In the last 5 minutes of cooking, add the peeled garlic cloves to the pot. Once the potatoes are cooked, drain and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Grilled Vegetables

    Prepare the Vegetables

    Slice the bell peppers, zucchini, and red onion into even-sized pieces. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

    Grill the Vegetables

    Grill the seasoned vegetables for about 8-10 minutes, turning occasionally until they are tender and have grill marks. Remove from heat.

Shallot Port Wine Demi

    Cook the Shallots

    In a saucepan over medium heat, melt butter and add finely chopped shallots. Sauté until they are soft and translucent, about 3-4 minutes.

    Make the Demi

    Add port wine to the shallots and bring to a simmer. Let it reduce by half, then add beef stock and continue to simmer until slightly thickened. Season with salt and pepper to taste.
