    In a bowl, combine soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger. Whisk until the sugar is dissolved and the marinade is well combined.

    Place the chicken thighs in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Heat a grill or a skillet over medium-high heat. Remove the chicken from the marinade, letting excess marinade drip off. Cook the chicken thighs for about 6-7 minutes per side, or until the internal temperature reaches 75°C (165°F) and the chicken is nicely caramelized.
