Katsu Preparation

    Prepare the Pork

    Season the pork loin with salt and black pepper on both sides. Cut into 4 equal pieces.

    Breading Station

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.

    Coat the Pork

    Dredge each piece of pork in flour, shaking off excess. Dip into the egg, then coat with panko breadcrumbs, pressing to adhere.

    Fry the Pork

    In a large skillet, heat vegetable oil over medium heat. Fry the breaded pork for 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Rice Preparation

    Rinse the Rice

    Rinse the short grain rice under cold water until the water runs clear. Drain.

    Cook the Rice

    In a rice cooker or saucepan, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes.

    In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve the sugar. Once the rice is cooked, fluff it with a fork and gently mix in the vinegar mixture.

    Peel and julienne the medium carrot into thin strips.
