Method
For the Kalua Pork
- 1
Prepare the Pork
Preheat your oven to 300°F (150°C). Rub the pork shoulder with Hawaiian sea salt and drizzle with liquid smoke. Wrap the pork tightly in banana leaves or aluminum foil.
- 2
Cook the Pork
Place the wrapped pork in a baking dish and cook in the preheated oven for 6-8 hours until the meat is tender and pulls apart easily.
- 3
Shred the Pork
Once cooked, remove the pork from the oven and let it rest for 30 minutes. Unwrap and shred the pork using two forks.
For the Tacos
- 4
Prepare the Tacos
Warm the corn tortillas in a skillet for about 30 seconds on each side until pliable.
- 5
Assemble the Tacos
Place a generous amount of the shredded Kalua pork on each tortilla. Top with diced red onion, chopped cilantro, and slices of avocado. Squeeze fresh lime juice over the top.
For the Fries
- 6
Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and cut the potatoes into fries, about 1/4 inch thick.
- 7
Season the Fries
In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
- 8
Bake the Fries
Spread the fries out on a baking sheet in a single layer. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.
