Fish

Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine the soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic. Whisk until the sugar is fully dissolved.

  2. 2

    Marinate the Fish

Place the snapper fillets in a shallow dish and pour the marinade over them. Ensure that the fillets are well coated. Cover and refrigerate for at least 30 minutes, up to 2 hours for better flavor.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to become white hot.

  2. 4

    Grill the Snapper

Remove the snapper from the marinade, allowing excess to drip off. Place the fillets on the grill skin-side down. Grill for about 4-5 minutes, then carefully flip and grill for another 3-4 minutes, or until the fish is cooked through and flakes easily with a fork.

Serving

  1. 5

    Plate the Dish

Once the snapper is cooked, remove it from the grill and let it rest for a couple of minutes. Serve on a plate, garnished with sliced green onions and toasted sesame seeds. Accompany with lemon wedges on the side.
