Preparing the Bowl Base

Cook Brown Rice
In a pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat and simmer covered for 40-45 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit for 10 minutes.

Prepare Vegetables
While the rice is cooking, wash and chop the spinach, halve the cherry tomatoes, and slice the cucumber into thin rounds. Cut the avocado in half, remove the pit, and slice it into wedges.
Cooking the Garlic Shrimp

Sauté Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook Shrimp
Add the pound of shrimp to the skillet along with 2 tablespoons of lemon juice and 1 teaspoon of red pepper flakes. Season with salt and black pepper to taste. Cook for about 3-4 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.
Assembling the Bowl

Combine Ingredients
In a bowl, layer the cooked brown rice as the base. Top with spinach, avocado, cherry tomatoes, and cucumber slices.

Garnish and Serve
Sprinkle the chopped cilantro over the top and serve with lime wedges on the side for squeezing over the dish.
