Make the Broth
In a large pot, combine the chicken broth, soy sauce, mirin, and sesame oil. Bring to a gentle simmer over medium heat.

Cook Saimin Noodles
Once the broth is simmering, add the saimin noodles to the pot. Cook according to package instructions, usually about 3-4 minutes, until noodles are tender.

While the noodles are cooking, prepare the toppings. Slice the char siu into thin pieces and set aside. Soft boil the eggs by placing them in boiling water for 6-7 minutes, then transferring to ice water to cool before peeling. Slice the uzumaki and chop the kai choy into bite-sized pieces.

Assemble Your Saimin
Once the noodles are cooked, divide them into serving bowls. Ladle the hot broth over the noodles. Top with sliced char siu, uzumaki, halved soft-boiled eggs, and chopped kai choy. Garnish with sliced green onions.
