Method
Lau Lau Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into chunks. Season with Hawaiian sea salt, salt, and pepper.

Wrap in Luau Leaves
Take the luau leaves and place the seasoned pork in the center. Fold the leaves over the pork and tie with string or twine to secure.

Steam the Lau Lau
Place the wrapped lau lau in a steamer basket and steam for 3-4 hours or until the pork is tender.
Kalua Pig Preparation

Season the Pork
Rub the pork shoulder with Hawaiian sea salt and liquid smoke evenly.

Wrap in Banana Leaves
Wrap the seasoned pork in banana leaves and place in a slow cooker.

Cook the Kalua Pig
Cook on low for 12-16 hours or until the meat is tender and shreds easily.
Lomi Lomi Salmon Preparation

Prepare the Salmon
Dice the fresh salmon fillet into small cubes.

Combine Ingredients
In a bowl, combine the diced salmon, diced tomatoes, sliced green onions, sea salt, and lime juice. Mix gently.

Chill and Serve
Let the lomi lomi salmon chill in the refrigerator for at least 30 minutes before serving.
