    Prepare the Ingredients

    Thinly slice the beef sirloin, onions, and mushrooms. Chop the Chinese cabbage into bite-sized pieces. Set aside.

Cooking

    Cook the Onions and Mushrooms

    In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Add the sliced onions and sauté for about 3-4 minutes until they become translucent. Add the sliced mushrooms and continue to sauté for another 3 minutes until they are tender.

    Add Beef and Cabbage

    Increase the heat to medium-high and add the sliced beef to the skillet. Cook for about 2-3 minutes until the beef is browned. Add the chopped Chinese cabbage and stir-fry for another 2 minutes until it begins to wilt.

    Make the Sauce

    In a small bowl, mix together the soy sauce, mirin, sugar, and sake. Pour the sauce over the beef and vegetables in the skillet. Stir well to combine and let it simmer for 2-3 minutes to allow the flavors to meld.

    Cook the Eggs

    In a separate small pan, bring a little water to a simmer. Crack the eggs into the simmering water to poach them for about 3-4 minutes until the whites are set but the yolks are still runny.

Assembly

    Serve the Gyu-Donburi

    Spoon the beef and vegetable mixture over cooked rice in bowls. Top each serving with a poached egg, garnish with chopped green onions, and sprinkle sesame seeds if desired. Serve immediately.
