Method

Crust Preparation

  1. 1

    Mix Crust Ingredients

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

  2. 2

    Form Crust

Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure the crust is even and goes slightly up the sides.

  3. 3

    Pre-bake Crust

Preheat the oven to 350°F (175°C) and bake the crust for about 8-10 minutes or until golden. Remove from the oven and let it cool.

Cheesecake Filling Preparation

  1. 4

    Prepare Cream Cheese

In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

  2. 5

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined.

  3. 6

    Incorporate Vanilla and Guava

Stir in the vanilla extract and guava puree. Mix until smooth and creamy.

  4. 7

    Add Eggs

Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

  5. 8

    Pour Filling into Crust

Pour the cheesecake filling over the pre-baked crust in the springform pan and smooth the top with a spatula.

  6. 9

    Bake Cheesecake

Bake in the preheated oven at 325°F (160°C) for 50-60 minutes or until the center is set and only slightly jiggly.

  7. 10

    Cool and Chill

Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.

Guava Topping Preparation

  1. 11

    Prepare Guava Topping

In a small saucepan, combine the guava jelly and water. Heat over low heat, stirring until the jelly is melted and smooth.

  2. 12

    Top Cheesecake

Once the cheesecake has chilled, pour the guava topping over the cheesecake, spreading it evenly.

  3. 13

    Serve

Slice the cheesecake and serve chilled. Enjoy your delicious guava cheesecake!
