For the Grilled Shishito Peppers

    Prepare the Peppers

    Rinse the shishito peppers under cold water and pat them dry with paper towels.

    Toss with Oil and Season

    In a bowl, toss the shishito peppers with olive oil, kosher salt, and black pepper until they are well coated.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Peppers

    Place the coated shishito peppers on the grill. Grill for about 5-7 minutes, turning occasionally, until the skins are blistered and charred. Remove from the grill.

For the Tzatziki Dipping Sauce

    Prepare the Cucumber

    Grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel and squeeze out excess moisture.

    Mix the Ingredients

    In a medium bowl, combine the Greek yogurt, drained grated cucumber, minced garlic, lemon juice, chopped dill, salt, and black pepper. Stir until well combined.

    Cover the tzatziki sauce with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
