For the Grilled Fish

For the Rice Base

Method

Prepare the Fish

  1. 1

    Marinate the Fish

In a bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Mix well and add the fish fillets, ensuring they are well-coated. Marinate for at least 30 minutes.

  2. 2

    Grill the Fish

Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated fish fillets on the grill. Cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from the grill and set aside.

Prepare the Rice

  1. 3

    Cook the Rice

In a medium saucepan, combine brown rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Assemble the Bowl

  1. 4

    Layer the Ingredients

In a bowl, add a generous scoop of the cooked brown rice as the base. Top with grilled fish fillets, sliced avocado, halved cherry tomatoes, diced cucumber, and chopped cilantro.

  2. 5

    Serve

Garnish with lime wedges on the side. Squeeze fresh lime juice over the bowl before eating for an extra burst of flavor.
