Cook the Udon Noodles
Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes until tender. Drain and set aside.

Prepare the Vegetables
Shred the cabbage into thin strips and chop the green onions, separating the white and green parts.

Cube the Luncheon Meat
Cut the luncheon meat into small cubes for easy frying.

Slice the Fishcake
Slice the fishcake into thin pieces.
Cooking

Heat the Oil
In a large frying pan or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté the Protein
Add the cubed luncheon meat and sliced fishcake to the pan. Stir-fry for about 3-4 minutes until they are golden and heated through.

Add the Vegetables
Add the shredded cabbage and the white parts of the green onions to the pan. Stir-fry for an additional 2-3 minutes until the cabbage is slightly wilted.

Combine with Noodles
Add the cooked udon noodles to the pan, tossing everything together to combine.

Season the Dish
Pour in the soy sauce, oyster sauce, sesame oil, salt, and black pepper. Continue to stir-fry for another 2-3 minutes until the noodles are heated through and well-coated with the sauces.

Finish with Green Onions
Add the green parts of the green onions and give the dish a final toss before removing from heat.
