Kalbi Preparation

    Marinate the Kalbi

    In a large bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, chopped green onions, and black pepper. Add the beef short ribs, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Noodle Preparation

    Cook the Saimin Noodles

    Bring 4 cups of water to a boil in a large pot. Add 1 tsp of salt. Once boiling, add the saimin noodles and cook according to package instructions, usually around 3-4 minutes. Drain and set aside.

Fried Saimin Assembly

    Cook the Kalbi

    Heat a grill or skillet over medium-high heat. Remove the beef short ribs from the marinade, letting excess drip off. Grill or pan-fry the ribs for about 4-5 minutes on each side or until cooked to your desired doneness. Remove from heat and let rest.

    Stir-Fry the Vegetables

    In a large frying pan or wok, heat 3 tbs of vegetable oil over medium heat. Add sliced onion and julienned carrot, and stir-fry for 2-3 minutes until they start to soften. Add the shredded cabbage and continue to stir-fry for another 2 minutes.

    Combine Noodles and Vegetables

    Add the cooked saimin noodles to the pan with the stir-fried vegetables. Pour in 2 tbs of soy sauce and toss everything together until the noodles are heated through and well-coated.

    Serve

    Slice the cooked Kalbi and serve it on top of the fried saimin. Garnish with toasted sesame seeds and additional chopped green onions if desired.
