In a large pot, bring water to a boil. Add the saimin noodles and cook according to the package instructions until al dente. Drain and set aside.

While the noodles are cooking, chop the green onions, julienne the carrot, and shred the cabbage. Set aside.

If using raw shrimp or chicken, ensure they are cooked and ready to use. If not, just shred the cooked chicken.
