    Cook the Noodles

    Bring a pot of water to a boil. Add the saimin noodles and cook according to package instructions, usually about 3-5 minutes until tender. Drain and set aside.

    Prepare the Proteins

    Slice the luncheon meat and fishcake into thin pieces. Beat the eggs in a bowl and set aside.

    Chop the Vegetables

    Chop the green onions and thinly slice the cabbage. Set aside.

Cooking

    Fry the Luncheon Meat and Fishcake

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced luncheon meat and fishcake. Stir-fry for about 3-4 minutes until they are browned and crispy. Remove from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped cabbage and stir-fry for about 2-3 minutes until slightly tender. Add the green onions and stir-fry for another minute.

    Combine Ingredients

    Add the cooked saimin noodles to the skillet with the vegetables. Pour in the soy sauce, sesame oil, and season with salt and black pepper to taste. Stir well to combine all ingredients.

    Add Eggs

    Push the noodle mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Then mix everything together.

    Return Proteins

    Return the fried luncheon meat and fishcake to the skillet. Toss everything together until heated through and well combined.
