Method

For the Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

  2. 2

    Prepare the Coating

In another bowl, mix together the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. This will be your coating mixture.

  3. 3

    Heat the Oil

In a large, deep skillet or Dutch oven, pour in the vegetable oil and heat over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small bit of flour; it should sizzle immediately.

  4. 4

    Coat the Chicken

Remove the chicken from the marinade and let the excess buttermilk drip off. Dredge each piece in the flour mixture, ensuring it's fully coated. Shake off any excess flour.

  5. 5

    Fry the Chicken

Carefully add the chicken pieces to the hot oil, working in batches if necessary to avoid overcrowding. Fry for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

  6. 6

    Drain and Rest

Once cooked, remove the chicken from the oil and place it on paper towels to drain excess oil. Let it rest for a few minutes before serving.

For the Side Dishes

  1. 7

    Make the Mashed Potatoes

Boil the potatoes in salted water until tender (about 20 minutes). Drain and return to the pot. Mash with butter, adding milk if necessary for creaminess. Season with salt to taste.

  2. 8

    Prepare the Gravy

In a saucepan, heat the gravy over medium heat until warmed through. Stir occasionally to prevent sticking.

  3. 9

    Cook the Corn

In a small pot, add the corn and butter. Cook over medium heat until heated through, stirring occasionally. Season with salt to taste.
