Preparing the Chips

    Cut and Soak the Potatoes

    Peel the potatoes and cut them into thick chips. Soak the chips in cold water for at least 30 minutes to remove excess starch.

    Preheat the Oil

    In a deep fryer or a large pot, heat the oil for frying to 325°F (160°C).

    Fry the Chips

    Drain the soaked chips and pat them dry with paper towels. Fry the chips in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

    Increase Oil Temperature

    Increase the oil temperature to 375°F (190°C) for the second fry.

    Final Fry

    Fry the chips again in batches for 3-4 minutes until golden brown and crispy. Season with salt to taste.

    In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water until the batter is smooth and thick.

    In a separate deep fryer or pot, heat the oil for frying to 375°F (190°C).

    Dip and Fry the Fish

    Dip each fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for 4-5 minutes until golden and cooked through. Remove and drain on paper towels.

    On a plate, serve the hot chips with the crispy fish on top. Optionally, drizzle with malt vinegar and serve with tartar sauce on the side.
