Sous Vide Egg Yolk Preparation

    Prepare the Sous Vide Water Bath

    Fill your sous vide container with water and set the temperature to 63°C (145°F).

    Mix the Egg Yolks

    In a bowl, gently whisk together the egg yolks, salt, and pepper until well combined.

    Sous Vide the Egg Yolks

    Transfer the egg yolk mixture into a vacuum-sealable bag or a small jar. Seal it and submerge it in the preheated water bath. Cook for 45 minutes.

Preparing the Toast

    Toast the Bread

    While the egg yolks are cooking, heat a skillet over medium heat. Spread butter on one side of each slice of Japanese bread.

    Grill the Bread

    Place the slices butter-side down in the skillet and grill until golden brown and crispy, about 2-3 minutes per side.

Assembly and Serving

    Assemble the Egg Toast

    Once the egg yolks are done, carefully remove them from the sous vide bath. Place a sous vide egg yolk on each slice of toasted bread.

    Add Toppings

    Top each egg yolk with a generous spoonful of fresh salmon roe and sprinkle with cured egg yolk shavings. Add chives if desired.

    Serve

    Serve the egg toast immediately while warm. Enjoy!
