For the Egg Fu Yong

For the Gravy (optional)

Method

For the Egg Fu Yong

  1. 1

    Prepare the Vegetables

Wash and chop all the vegetables: bean sprouts, green onions, carrots, and mushrooms. Set them aside.

  2. 2

    Mix the Egg Mixture

In a large bowl, crack the eggs and whisk them until well beaten. Add soy sauce, sesame oil, salt, and pepper. Mix well.

  3. 3

    Combine Vegetables with Eggs

Add the prepared vegetables (bean sprouts, green onions, carrots, mushrooms) to the egg mixture and stir until evenly combined.

  4. 4

    Heat the Oil

In a large skillet or frying pan, heat the oil over medium heat until hot but not smoking.

  5. 5

    Cook the Egg Fu Yong

Pour a ladleful of the egg and vegetable mixture into the skillet, forming a round pancake. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 2-3 minutes on the other side. Repeat for the remaining mixture.

For the Gravy (optional)

  1. 6

    Prepare the Gravy

In a small saucepan, combine chicken or vegetable broth, soy sauce, and sugar. Bring to a simmer over medium heat.

  2. 7

    Thicken the Gravy

In a separate bowl, mix cornstarch and water until smooth. Gradually add this mixture to the simmering broth, stirring constantly until the gravy thickens, about 2-3 minutes.

  3. 8

    Finish the Gravy

Remove the saucepan from heat and add sesame oil. Stir well to combine.
