Method
For the Egg Fu Yong

Prepare the Vegetables
Wash and chop all the vegetables: bean sprouts, green onions, carrots, and mushrooms. Set them aside.

Mix the Egg Mixture
In a large bowl, crack the eggs and whisk them until well beaten. Add soy sauce, sesame oil, salt, and pepper. Mix well.

Combine Vegetables with Eggs
Add the prepared vegetables (bean sprouts, green onions, carrots, mushrooms) to the egg mixture and stir until evenly combined.

Heat the Oil
In a large skillet or frying pan, heat the oil over medium heat until hot but not smoking.

For the Gravy (optional)

Prepare the Gravy
In a small saucepan, combine chicken or vegetable broth, soy sauce, and sugar. Bring to a simmer over medium heat.

Thicken the Gravy
In a separate bowl, mix cornstarch and water until smooth. Gradually add this mixture to the simmering broth, stirring constantly until the gravy thickens, about 2-3 minutes.

Finish the Gravy
Remove the saucepan from heat and add sesame oil. Stir well to combine.
