Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even-sized fries, about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

Heat the Duck Fat
In a large, heavy-bottomed pot or deep fryer, heat the duck fat over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the temperature is accurate.

Fry the Potatoes
Add the dried fries to the hot duck fat in batches, being careful not to overcrowd the pot. Fry for about 4-5 minutes or until the fries are golden brown and crispy.

Using a slotted spoon, remove the fries and place them on a paper towel-lined plate to drain excess fat. While still hot, sprinkle with sea salt, freshly ground black pepper, and chopped fresh rosemary if desired.
