Prepare Rice

    Rinse Rice

    Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch.

    Cook Rice

    In a medium pot, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.

    Fluff Rice

    Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Prepare Lechon

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Marinate Pork

    In a large mixing bowl, combine minced garlic, sliced onion, soy sauce, and black pepper. Add the pork belly and marinate for at least 30 minutes.

    Sear Pork

    In a large skillet, heat olive oil over medium-high heat. Remove pork from marinade and sear on both sides until golden brown, about 5 minutes per side.

    Roast Pork

    Transfer seared pork to a baking dish and roast in the preheated oven for 1.5 to 2 hours, or until the skin is crispy and the meat is tender. Baste occasionally with pan drippings.

Prepare Gravy

    Melt Butter

    In a saucepan, melt the unsalted butter over medium heat.

    Add all-purpose flour to the melted butter, whisking constantly for about 2-3 minutes until it’s golden brown to form a roux.

    Gradually whisk in the chicken broth and soy sauce. Continue whisking until the gravy thickens, about 5-7 minutes. Season with ground black pepper.
