Prepare the Ingredients
Dice the ham, bell peppers, and onions into small uniform pieces. Set aside.

Beat the Eggs
In a mixing bowl, crack the eggs and beat them together with salt and black pepper until well combined.

Sauté the Vegetables
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced bell peppers and onions, sautéing for about 3-4 minutes until softened.

Add Filling
As the eggs begin to set, sprinkle the sautéed vegetable and ham mixture evenly over one half of the eggs. Top with shredded cheese.

Fold the Omelette
Once the eggs are fully cooked and the cheese has melted, carefully fold the omelette in half over the filling. Cook for an additional minute to allow the cheese to fully melt.

Slide the omelette onto a plate and cut in half if desired. Serve hot.
