Method
Tofu Preparation
- 1
Press the Tofu
Start by draining the firm tofu and pressing it between paper towels to remove excess moisture. Place a heavy object on top for about 15-20 minutes.
- 2
Cut and Coat the Tofu
Once pressed, cut the tofu into bite-sized cubes. Toss the tofu cubes gently in cornstarch until fully coated.
- 3
Deep Fry the Tofu
In a large pot or deep fryer, heat the vegetable oil to 180°C (350°F). Carefully add the coated tofu cubes in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
Curry Sauce
- 4
Prepare the Curry Sauce
In a large saucepan, combine the coconut milk, red curry paste, vegetable broth, soy sauce, brown sugar, and lime juice. Stir well to mix all the ingredients together.
- 5
Simmer the Sauce
Bring the mixture to a gentle simmer over medium heat. Allow it to cook for about 5-7 minutes until it thickens slightly.
- 6
Add Fresh Basil
Stir in the fresh basil leaves and remove the saucepan from heat.
Vegetables
- 7
Prepare the Vegetables
While the tofu is frying and the sauce is simmering, wash and chop the bell pepper, carrot, and zucchini into bite-sized pieces. Slice the green onions.
- 8
Combine Vegetables with Sauce
Once the curry sauce is ready, add the chopped vegetables to the sauce and stir well to combine.
Final Assembly
- 9
Combine Tofu and Sauce
Gently fold the fried tofu into the curry sauce with vegetables, making sure the tofu is coated well.
- 10
Serve
Serve the deep-fried tofu curry hot, garnished with extra basil or green onions if desired.
