Method

Prepare the Rice

    Cook the Rice

    In a medium saucepan, combine 2 cups of jasmine rice, 4 cups of water, and 1 tsp of salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Cook the Meats

    Prepare SPAM

    Slice the SPAM into 1/4-inch thick slices. In a skillet over medium heat, cook the SPAM slices for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Cook Portuguese Sausage

    Slice the Portuguese sausage into 1/4-inch thick slices. In the same skillet, add the Portuguese sausage and cook for about 3-4 minutes on each side until browned. Remove and set aside.

    Slice the link sausage into 1/4-inch thick slices. Add to the skillet and cook for about 3-4 minutes on each side until browned. Remove and set aside.

Fry the Eggs

    Cook the Eggs

    In a non-stick skillet, heat a small amount of oil over medium heat. Crack the 2 large eggs into the skillet and cook to your preference, sunny-side up or over-easy. Season with salt and pepper to taste.

Make the Brown Gravy

    Prepare the Gravy

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of all-purpose flour and whisk together, cooking for about 1 minute until golden. Gradually add 2 cups of beef broth while whisking to prevent lumps. Stir in 1 tablespoon of soy sauce and 1 teaspoon of black pepper. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes.

Assemble the Dish

    Plate Da Big Mok

    On a large plate, place a serving of rice as the base. Top with the cooked SPAM, Portuguese sausage, and link sausage. Place the fried eggs on top and generously drizzle with brown gravy. Serve hot and enjoy!
