    Wash the cucumbers and radishes thoroughly. Slice the cucumbers into thin rounds and the radishes into thin matchsticks. Chop the green onions into small pieces.

    Peel and mince the garlic cloves. Grate the fresh ginger.

Making the Kimchee

    Mix the Sauce

    In a bowl, combine the Korean red pepper flakes, fish sauce, sugar, salt, and sesame oil. Stir until well mixed.

    In a large mixing bowl, add the sliced cucumbers, radishes, green onions, minced garlic, and grated ginger. Pour the sauce over the vegetables.

Fermentation

    Pack the kimchee mixture tightly into a clean glass jar, leaving some space at the top for expansion during fermentation.

    Seal the jar with a lid and let it sit at room temperature for 1 to 3 days, depending on your desired level of fermentation. Check daily and taste until it reaches your preferred flavor.

    Once fermented to your liking, store the jar in the refrigerator to slow down the fermentation process.
