Noodles Preparation

Cook the Soba Noodles
In a large pot, bring 1 litre of water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-5 minutes until al dente.

Drain and Rinse
Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process and cool them down. Set aside.
Vegetable Preparation

Slice the Vegetables
While the noodles are cooking, wash and prepare the vegetables. Cut the cucumber, carrot, radish, and bell pepper into thin strips or julienne style. Chop the green onions into small pieces.
Dipping Sauce Preparation

Mix the Dipping Sauce
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or sugar), and minced garlic until well combined. Adjust the sweetness to your preference by adding more honey or sugar if desired.

Garnish the Sauce
Sprinkle sesame seeds into the sauce and mix well. Set aside for serving.
Assembly

Plate the Noodles and Vegetables
On a large serving platter or individual bowls, place a generous portion of the cold soba noodles. Arrange the sliced vegetables on top or around the noodles.

Serve with Dipping Sauce
Serve the cold noodles with a bowl of dipping sauce on the side. Enjoy by dipping the noodles and vegetables into the sauce before each bite.
