Method

Preparing the Poke Base

    Cook Sushi Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine the rinsed rice with 1.25 cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Prepare Quinoa

    Rinse 1 cup of quinoa under cold water. In a pot, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.

    Prepare Mixed Greens

    Wash and dry 4 cups of mixed greens. Set aside for serving.

Preparing the Proteins

    Prepare Ahi Tuna

    Dice 8 ounces of fresh Ahi tuna into bite-sized cubes. Keep refrigerated until ready to serve.

    Dice 8 ounces of fresh salmon into bite-sized cubes. Keep refrigerated until ready to serve.

    Prepare Tofu

    Press and drain 8 ounces of firm tofu to remove excess moisture. Cut into cubes and pan-fry until golden brown, about 5-7 minutes.

Assembling the Poke Bowl

    Create the Base

    Choose your base (sushi rice, quinoa, or mixed greens) and place it in a bowl.

    Add Protein

    Select three poke proteins (Ahi tuna, salmon, tofu) and arrange them on top of the base.

    Add Toppings

    Top the poke bowl with sliced avocado, seaweed salad, sliced cucumber, sliced radish, and sprinkle sesame seeds on top.

    Drizzle with Dressing

    In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and Sriracha (to taste). Drizzle the dressing over the poke bowl.

Preparing the Sides

    Steam 1 cup of edamame in the pod for about 5 minutes until tender. Sprinkle with sea salt before serving.

    Heat 4 cups of water in a pot until boiling. Dissolve miso paste in a small amount of warm water, then add to the pot. Simmer for 5 minutes and serve hot.
