Method
Making the Cookies
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- 2
Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
- 3
Cream Butter and Sugars
In a large bowl, using a hand mixer or stand mixer, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- 4
Add Egg and Vanilla
Beat in the egg and vanilla extract until well combined.
- 5
Combine Mixtures
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.
- 6
Scoop the Dough
Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- 7
Bake the Cookies
Bake in the preheated oven for 10-12 minutes, or until the edges are set. The centers may look slightly underbaked but will firm up as they cool.
- 8
Cool the Cookies
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Making the Cream Filling
- 9
Beat Butter
In a medium bowl, beat the softened unsalted butter with a hand mixer until creamy.
- 10
Add Sugar and Vanilla
Gradually add the powdered sugar and beat until smooth. Add the vanilla extract and mix until well combined.
- 11
Fill the Cookies
Once the cookies are completely cool, spread or pipe a generous amount of cream filling onto the flat side of one cookie and sandwich it with another cookie.
