Marinate the Chicken
In a large bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Add the chicken breasts and coat them well with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

Prepare for Cooking
Preheat your grill or oven to medium-high heat (about 375°F/190°C). If using skewers, soak wooden skewers in water for 30 minutes to prevent burning.

Cook the Chicken
Remove the chicken from the marinade and thread them onto skewers if desired. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Mix the Ingredients
In a small bowl, combine Greek yogurt, Dijon mustard, honey, minced garlic, salt, and black pepper. Stir well until all ingredients are evenly mixed.

Taste the dipping sauce and adjust the seasoning with more salt and pepper if desired. Refrigerate until ready to serve.
