Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and season lightly with salt and pepper.

Prepare the Vegetables
Julienne the carrots, slice the bell pepper and mushrooms, and chop the green onions. Mince the garlic and ginger.

Cook the Chicken
In a large frying pan or wok, heat 1 tablespoon of sesame oil over medium heat. Add the chicken pieces and sauté until they are golden brown and cooked through, about 7-10 minutes. Remove the chicken from the pan and set aside.

Sauté the Vegetables
In the same pan, add the remaining sesame oil. Add the minced garlic and ginger, and sauté for 1 minute until fragrant. Then add the carrots, bell pepper, mushrooms, and half of the chopped green onions. Stir-fry for about 5 minutes until the vegetables are tender-crisp.

Make the Sauce
In a small bowl, mix together the soy sauce, mirin, cornstarch, and water until well combined. Pour this sauce over the sautéed vegetables in the pan.

Combine Chicken and Sauce
Return the cooked chicken to the pan, and stir well to coat in the sauce. Cook for another 2-3 minutes until the sauce thickens slightly.

Garnish and Serve
Remove the pan from heat, and serve the Chicken Hekka hot, garnished with the remaining green onions.
