For the Chicken Cutlets

For the Side Salad

For the Optional Side (Mashed Potatoes)

Method

Preparing the Chicken Cutlets

  1. 1

    Prepare Chicken

Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet, pound the chicken to an even thickness, about 1/2 inch thick.

  2. 2

    Set Up Breading Station

In three separate shallow dishes, place the flour in one, beaten eggs in another, and the bread crumbs mixed with salt, black pepper, garlic powder, and paprika in the third.

  3. 3

    Bread the Chicken

Coat each chicken breast in flour, shaking off the excess. Dip in the beaten eggs, then coat with the seasoned bread crumbs, pressing gently to adhere.

  4. 4

    Cook the Cutlets

In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken cutlets and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Preparing the Side Salad

  1. 5

    Prepare Salad Ingredients

In a large bowl, add mixed greens, halved cherry tomatoes, and sliced cucumber.

  2. 6

    Make Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.

  3. 7

    Toss Salad

Drizzle the dressing over the salad and toss gently to combine.

Preparing the Optional Side (Mashed Potatoes)

  1. 8

    Boil Potatoes

Peel and chop potatoes into quarters. Place in a pot of salted water and boil until tender, about 15-20 minutes.

  2. 9

    Mash Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.
