Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine soy sauce, vinegar, minced garlic, bay leaves, black peppercorns, and water. Mix well.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight for best results.

Cooking the Chicken

    Sear the Chicken

    In a large pot or deep skillet, heat cooking oil over medium-high heat. Remove chicken from the marinade (reserve the marinade) and sear the chicken pieces skin-side down for about 5 minutes, until golden brown. Flip and sear the other side for an additional 5 minutes.

    Add the Marinade

    Once the chicken is browned, add the reserved marinade and sliced onion to the pot. Bring to a boil, then reduce to a simmer.

    Cook the Chicken

    Cover the pot and let it simmer for 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally.

    Taste the sauce and add salt as needed. Remove from heat.

Cooking the Rice

    In a fine-mesh strainer, rinse the white rice under cold water until the water runs clear. This removes excess starch.

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat, then reduce to low heat and cover. Cook for about 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Serving

    Serve the chicken adobo over a bed of rice. Garnish with chopped green onions and add hard-boiled eggs if desired.
