Prepare the Chicken
Clean the chicken thighs and pat them dry with a paper towel. If you prefer, you can remove the skin for a healthier option.

Marinate the Chicken
In a large mixing bowl, combine soy sauce, vinegar, crushed garlic cloves, bay leaves, and black peppercorns. Add the chicken thighs and ensure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.

If using, chop the onion and green onions. Set aside.

Sauté Onions
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onion (if using) and sauté until translucent, about 3-4 minutes.

Remove the chicken from the marinade (reserve the marinade) and add it to the pot. Brown the chicken on all sides for about 5-7 minutes.

Pour the reserved marinade and 1 cup of water into the pot. Bring to a boil, then reduce the heat to low. Cover and let simmer for 30-40 minutes until the chicken is tender and fully cooked.
