Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to make fries.

    Soaking the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drying the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Frying the Fries

    In a large pot or deep fryer, heat the duck fat over medium-high heat until it reaches 350°F (175°C). Carefully add the fries in batches, frying them for about 5-7 minutes or until they are golden brown and crispy.

    Draining the Fries

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess fat. Season them with salt and black pepper to taste.

Adding the Cheese

    Layering the Cheese

    Preheat your oven to 400°F (200°C). Place the fried fries on a baking sheet. Evenly sprinkle the shredded cheddar cheese and grated Parmesan cheese over the fries.

    Melting the Cheese

    Place the baking sheet in the oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly.

    Garnishing

    Once the cheese is melted, remove the fries from the oven and garnish with chopped green onions.
