Prepare Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear, removing excess starch.

Cook the Sushi Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 20 minutes or until all water is absorbed.

Season the Rice
Once cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula.

Cool the Rice
Spread the rice on a large plate or a bamboo sushi mat to cool to room temperature.

Prepare Your Rolling Station
Lay a bamboo sushi mat on a clean surface and place a sheet of nori, shiny side down, on the mat.

Add the Sushi Rice
With wet hands, take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start to roll away from you, pressing gently but firmly as you roll. Continue rolling until the nori is sealed.

Slice the Roll
Use a sharp knife dipped in water to slice the roll into 6-8 pieces. Clean the knife with a damp cloth after each cut for clean slices.

Serve
Sprinkle sesame seeds on top of the sushi rolls and serve with soy sauce, wasabi, and pickled ginger on the side.
