Prepare Chicken

    Season the Chicken

    In a large bowl, season the boneless chicken thighs with salt and black pepper. Mix well to ensure the chicken is evenly coated.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In another bowl, whisk the eggs until well beaten. In a third bowl, combine the cornstarch with a pinch of salt.

    Bread the Chicken

    Dip each seasoned chicken thigh into the flour, coating it lightly. Then dip it into the egg mixture, allowing any excess to drip off. Finally, coat it with the cornstarch, pressing gently to adhere.

Fry Chicken

    Heat Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Chicken

    Carefully add the breaded chicken thighs to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 5-7 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

    Drain and Rest

    Once fried, remove the chicken and place it on a paper towel-lined plate to drain excess oil. Let it rest while you prepare the sauce.

Prepare Sauce

    Mix Sauce Ingredients

    In a saucepan over medium heat, combine the gochujang, honey, soy sauce, rice vinegar, minced garlic, and sesame oil. Stir well until the mixture is smooth and heated through, about 3-5 minutes.

    Add Green Onions and Sesame Seeds

    Remove from heat and stir in the chopped green onions and toasted sesame seeds, mixing well to combine.

Combine and Serve

    Coat Chicken with Sauce

    In a large bowl, add the fried chicken and pour the sweet and spicy Korean sauce over the top. Toss gently to coat each piece of chicken evenly with the sauce.

    Serve the boneless Korean chicken hot, garnished with additional green onions and sesame seeds if desired. Enjoy with rice or as an appetizer.
