    In a bowl, combine flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and has no lumps.

    Heat the oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Batter the fish

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the fish

    Carefully place the battered fish fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Prep the potatoes

    Peel the russet potatoes and cut them into thin strips to create fries.

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Tartar Sauce

    In a bowl, combine mayonnaise, chopped dill pickles, chopped capers, and fresh lemon juice. Stir well to combine.
