    Prepare the Ingredients

    Chop the beef chuck into 1-inch cubes. Peel and slice the carrots, and cut the potatoes into quarters. Chop the celery and onion, and mince the garlic.

    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.

    Combine Ingredients

    Return the seared beef to the pot. Add the potatoes, beef broth, red wine, bay leaves, thyme, salt, and black pepper. Stir to combine.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

    Taste the stew and adjust seasoning if necessary. Remove bay leaves before serving.
