    Prepare the Ingredients

    Start by prepping all the ingredients. Peel and chop the onion, garlic, carrots, and potatoes into bite-sized pieces. Set aside.

    Season the Roast

    Pat the beef chuck roast dry with paper towels. Season generously with salt and black pepper on all sides.

    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the seasoned beef roast and sear for about 4-5 minutes on each side until browned. Remove the roast and set aside.

    Sauté Onions and Garlic

    In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Vegetables

    Add the chopped carrots and potatoes to the pot, stirring to combine with the onions and garlic.

    Deglaze the Pot

    Pour in about 1 cup of beef broth, scraping the bottom of the pot to release any browned bits from the roast. This adds flavor to the dish.

    Combine Ingredients

    Place the seared beef roast back into the pot. Add the remaining beef broth, bay leaves, thyme, and rosemary. Stir gently to combine.

    Cook the Roast

    Cover the pot with a lid and let the roast cook on low heat for about 3-4 hours or until the meat is fork-tender. You can also use a slow cooker on low for the same amount of time.

    Once done, remove the roast from the pot and let it rest for a few minutes. Slice and serve with the vegetables and broth from the pot.
