Preparation

  1. 1

    Chop the Ingredients

Begin by chopping the onion, garlic, ginger, carrots, potatoes, and bell pepper into even-sized pieces. This will help them cook evenly.

Cooking

  1. 2

    Brown the Beef

In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Cut the beef chuck into bite-sized pieces, season with salt and black pepper, and brown them in batches. Set the browned beef aside.

  2. 3

    Sauté the Vegetables

In the same pot, add the chopped onion and sauté for 3-4 minutes until soft. Add minced garlic and ginger and cook for another minute until fragrant.

  3. 4

    Add Spices

Stir in the curry powder, cumin, turmeric, and chili powder. Cook for about 2 minutes to toast the spices, stirring frequently.

  4. 5

    Combine Ingredients

Return the browned beef to the pot, followed by the carrots, potatoes, and bell pepper. Stir to combine.

  5. 6

    Add Liquids

Pour in the coconut milk and beef broth. Bring to a gentle simmer, cover, and let cook for about 1.5 to 2 hours, or until the beef is tender.

Finishing Touches

  1. 7

    Garnish and Serve

Once the beef is tender, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and lime wedges on the side.
