Potato Preparation

Garlic Parmesan Topping

Dipping Sauce (optional)

Method

Frying the Potatoes

  1. 1

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, approximately 1/4 inch thick, to resemble fries.

  2. 2

    Soak the Potatoes

Soak the cut fries in cold water for at least 30 minutes to remove excess starch, which helps achieve a crispier texture.

  3. 3

    Dry the Potatoes

Drain the soaked fries and pat them dry with paper towels to remove excess moisture.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  5. 5

    Fry the Potatoes

Carefully add the dried fries to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes until golden brown and crispy.

  6. 6

    Drain the Fries

Remove the fries from the oil using a slotted spoon and drain on paper towels. Sprinkle salt over them immediately while they're still hot.

Adding the Garlic Parmesan Topping

  1. 7

    Prepare the Topping

In a small skillet over medium heat, add a little oil (about 1 tbsp) and sauté the minced garlic until fragrant, about 1-2 minutes. Do not burn the garlic.

  2. 8

    Combine Topping Ingredients

In a large bowl, toss the hot fries with the sautéed garlic, grated Parmesan cheese, chopped parsley, and black pepper until well combined.

Preparing the Dipping Sauce (optional)

  1. 9

    Mix the Dipping Sauce

In a small bowl, mix together the mayonnaise and sriracha sauce until fully combined. Adjust the spice level to taste.
