Prepare the beef patties
In a large bowl, season the ground beef with salt and pepper. Divide the beef into two equal portions and shape them into patties, about 3/4 inch thick.

Cook the beef patties
In the same skillet with the bacon grease, add the beef patties. Cook for about 4-5 minutes on one side, then flip the patties.

Add cheese
After flipping the patties, place a slice of cheddar cheese on each patty. Cook for an additional 3-4 minutes, or until the cheese is melted and the patties reach your desired doneness.

Toast the buns
While the patties are cooking, split the hamburger buns and place them cut side down in the skillet for 1-2 minutes until toasted.

Prepare the potatoes
Peel the potatoes and cut them into fries, about 1/4 inch thick.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the potatoes
Working in batches, carefully add the cut fries to the hot oil. Fry for 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
