For the Empanada Dough

Make the Dough
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Add Water
Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork it. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling
In a medium bowl, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, and cornstarch. Mix until the apples are well coated and set aside to let the flavors meld.
Assembling and Baking

Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Roll Out the Dough
On a floured surface, roll out the chilled empanada dough to about 1/8 inch thick. Cut out circles using a 4-inch cutter.

Fill the Empanadas
Place a tablespoon of the apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

Bake the Empanadas
Transfer the empanadas to the prepared baking sheet. Bake in the preheated oven for 25-30 minutes or until golden brown.

Serve the Empanadas
Allow the empanadas to cool slightly before serving. Place a scoop of vanilla ice cream on each plate, drizzle with caramel sauce, and serve the warm empanadas on the side.
